Ingredients

1 pound carrots, peeled and trimmed

2 tablespoons butter

2 tablespoons honey

1 tablespoon brown sugar

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1 teaspoon fresh thyme leaves

1 tablespoon chopped fresh parsley

1 teaspoon lemon juice, optional


Instructions

1. Wash, peel, and trim the carrots. Leave them whole if they are slim, or cut larger carrots in half lengthwise so they cook evenly.

2. Place the carrots in a large skillet with 1/3 cup water. Cover and cook over medium heat for 8 to 10 minutes, or until just fork-tender.

3. Drain any extra water from the skillet. Add butter, honey, brown sugar, salt, black pepper, and garlic powder.

4. Cook uncovered for 4 to 6 minutes, turning the carrots often, until the glaze thickens and coats the carrots.

5. Sprinkle with fresh thyme and parsley. Add lemon juice if using, then serve warm.

Notes

Use carrots that are similar in size so they cook evenly and stay tender without turning mushy.

Drain the water before adding the glaze ingredients so the butter and honey can thicken properly.

Add the fresh herbs at the end so they stay bright, fragrant, and fresh-tasting.
