Description
This Easy Ground Chicken & Cabbage Stir Fry is a quick dinner that brings lean protein, tender cabbage, crisp carrots, garlic, ginger, and a glossy soy-sesame sauce together in one skillet. Ingredients
1 pound ground chicken
6 cups green cabbage, thinly sliced
1 cup shredded carrots
4 green onions, sliced, white and green parts separated
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons neutral oil
1/4 cup low-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon toasted sesame oil
1 tablespoon honey or brown sugar
1 teaspoon cornstarch
2 tablespoons water
1/4 teaspoon black pepper
1/2 teaspoon red pepper flakes or 1 teaspoon chili garlic sauce, optional
1 tablespoon sesame seeds, optional for serving
Instructions
1. Whisk soy sauce, rice vinegar, sesame oil, honey or brown sugar, cornstarch, water, black pepper, and optional red pepper flakes or chili garlic sauce in a small bowl until smooth.
2. Heat neutral oil in a large skillet over medium-high heat.
3. Add ground chicken and cook for 5 to 6 minutes, breaking it apart, until no longer pink and lightly browned.
4. Stir in garlic, ginger, and the white parts of the green onions. Cook for 30 to 60 seconds until fragrant.
5. Add cabbage and shredded carrots. Toss with the chicken and cook for 5 to 7 minutes until the cabbage is tender but still slightly crisp.
6. Stir the sauce again, pour it into the skillet, and toss everything well.
7. Cook for 1 to 2 minutes until the sauce thickens slightly and coats the chicken and vegetables.
8. Remove from heat and top with green onion tops and sesame seeds if using.
9. Serve warm on its own, over rice, with noodles, cauliflower rice, or in lettuce cups.
Notes
Use a large skillet or wok so the cabbage cooks quickly without steaming too much.
Slice the cabbage thinly for the best tender-crisp texture.
For a saucier stir fry, add 1 extra tablespoon soy sauce and 1 extra tablespoon water before thickening.
