Ingredients

1 1/2 cups cottage cheese

2 large eggs

1 cup marinara sauce

1 1/2 cups shredded mozzarella cheese

1/4 cup grated Parmesan cheese

24 slices pepperoni

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes

1 tablespoon chopped fresh basil or parsley


Instructions

1. Preheat the oven to 375°F and lightly grease an 8×8-inch baking dish.

2. In a bowl, mix cottage cheese, eggs, Parmesan cheese, Italian seasoning, garlic powder, onion powder, black pepper, and crushed red pepper flakes.

3. Spread half of the cottage cheese mixture into the prepared baking dish.

4. Spoon half of the marinara sauce over the mixture, then sprinkle with 1/2 cup mozzarella cheese.

5. Add the remaining cottage cheese mixture, then spread the remaining marinara sauce on top.

6. Sprinkle the remaining mozzarella cheese over the bake and arrange pepperoni slices across the top.

7. Bake uncovered for 25 to 30 minutes, until the center is set and the cheese is melted and bubbling.

8. Broil for 1 to 2 minutes if you want a more golden top, watching carefully.

9. Let the bake rest for 5 to 10 minutes, then garnish with basil or parsley before serving.
