Ingredients

4 large everything bagels

6 large eggs

1/3 cup milk or half-and-half

4 ounces cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup cherry tomatoes, finely diced

2 green onions, thinly sliced

2 tablespoons fresh parsley, chopped

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon everything bagel seasoning


Instructions

1. Preheat the oven to 375°F and line a baking sheet with parchment paper.

2. Slice the bagels in half and gently scoop or press down the soft center of each half to create a well.

3. Spread a thin layer of softened cream cheese inside each hollowed bagel half.

4. In a mixing bowl, whisk the eggs, milk, garlic powder, salt, and black pepper until smooth.

5. Stir in the cheddar cheese, diced tomatoes, green onions, and parsley.

6. Spoon the egg mixture into the prepared bagel halves, filling each one close to the top without overflowing.

7. Sprinkle everything bagel seasoning and a little extra cheddar over the tops.

8. Bake for 18 to 22 minutes, or until the egg filling is set and the bagel edges are lightly crisp.

9. Let the stuffed bagels rest for 5 minutes before serving warm.

Notes

Use thick, sturdy bagels so they can hold the egg filling without tearing or leaking.
