Ingredients

1 cup all-purpose flour

1 cup eggnog

1/2 cup milk

2 large eggs

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

1/8 teaspoon salt

1 tablespoon butter, for the pan

1/2 cup whipped cream, for serving

1/2 cup mixed berries, for serving

1 tablespoon powdered sugar, for serving


Instructions

1. In a medium bowl, whisk together the flour and salt.

2. Add the eggnog, milk, eggs, melted butter, vanilla extract, and nutmeg. Whisk until the batter is smooth and thin.

3. Let the batter rest for 20 to 30 minutes so the flour fully hydrates.

4. Heat a nonstick skillet over medium heat and lightly grease it with a little butter.

5. Pour about 1/4 cup batter into the pan, then quickly swirl to form a thin circle.

6. Cook for 1 to 2 minutes, until the edges are set and the bottom is lightly golden.

7. Flip carefully and cook the second side for 30 seconds to 1 minute.

8. Transfer to a plate and repeat with the remaining batter, adding a little more butter to the pan as needed.

9. Stack the finished crêpes and keep them warm.

10. Serve with whipped cream, mixed berries, and a light dusting of powdered sugar.

Notes

Resting the batter helps the crêpes turn out softer and easier to flip.

Keep the heat at medium so the crêpes cook evenly without becoming dry or too dark.

If the batter thickens while it sits, whisk in a tablespoon or two of milk before cooking the remaining crêpes.
