Ingredients

4 large eggs

3/4 cup granulated sugar

1 teaspoon vanilla extract

2 tablespoons vegetable oil

3 tablespoons milk

1/2 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1 teaspoon baking powder

1/4 teaspoon salt

4 ounces cream cheese, softened

1 cup powdered sugar

1 1/4 cups heavy whipping cream

3/4 cup chopped cherries, well drained

1/2 cup chocolate ganache

1/3 cup chocolate shavings

6 whole fresh cherries for garnish

Fresh mint leaves for garnish


Instructions

1. Preheat the oven to 350°F and line a 10×15-inch jelly roll pan with parchment paper, then lightly grease the paper.

2. Beat the eggs and granulated sugar for 4 to 5 minutes until pale, thick, and fluffy.

3. Mix in the vanilla extract, vegetable oil, and milk until combined.

4. Sift together the flour, cocoa powder, baking powder, and salt, then gently fold the dry ingredients into the egg mixture.

5. Spread the batter evenly into the prepared pan and bake for 10 to 12 minutes, until the cake springs back lightly when touched.

6. Turn the warm cake onto a clean kitchen towel dusted with powdered sugar, remove the parchment paper, and roll the cake up gently in the towel from the short end. Let it cool completely.

7. Beat the cream cheese and powdered sugar until smooth. In a separate bowl, whip the heavy cream to medium peaks, then fold it into the cream cheese mixture.

8. Unroll the cooled cake, spread the filling evenly over the surface, and sprinkle the chopped cherries over the cream.

9. Roll the cake back up gently without the towel and place it seam-side down on a serving platter.

10. Chill for at least 1 hour.

11. Top with chocolate ganache, chocolate shavings, whipped cream if desired, fresh cherries, and mint before slicing and serving.

Notes

Use well-drained cherries so the filling stays thick and the cake does not get soggy.

Roll the cake while it is still warm to help prevent cracks later.

Chill the finished roll before slicing for the cleanest swirl.
