Ingredients

4 boneless skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

1 1/2 teaspoons Italian seasoning

2 tablespoons olive oil

2 tablespoons butter

4 cloves garlic, minced

1 cup chicken broth

1/3 cup pepperoncini brine

1 cup sliced pepperoncini peppers

1 cup heavy cream

3/4 cup grated parmesan cheese

2 tablespoons fresh parsley, chopped


Instructions

1. Pat the chicken dry, then season both sides with salt, black pepper, paprika, and Italian seasoning.

2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4 to 5 minutes per side until golden, then transfer it to a plate.

3. Lower the heat to medium and melt the butter in the same skillet. Add the garlic and cook for about 30 seconds until fragrant.

4. Pour in the chicken broth and pepperoncini brine, scraping the bottom of the skillet to lift the browned bits.

5. Add the sliced pepperoncini peppers and simmer for 2 to 3 minutes.

6. Reduce the heat to medium-low, then stir in the heavy cream and parmesan cheese until the sauce is smooth.

7. Return the chicken to the skillet and spoon sauce over the top. Simmer for 6 to 8 minutes, or until the chicken is cooked through.

8. Taste and adjust the seasoning, then garnish with fresh parsley and serve hot with extra sauce.

Notes

Use thin chicken cutlets so the chicken cooks evenly and stays tender.

Keep the sauce at a gentle simmer after adding the cream so it stays smooth.
