Ingredients
1 1/2 pounds potatoes
14 ounces smoked Polish sausage
1 large onion
2 tablespoons olive oil
1 tablespoon butter
2 cloves garlic
1 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
2 tablespoons fresh parsley
Instructions
1. Wash the potatoes and cut them into even bite-size cubes. Slice the smoked Polish sausage into rounds, chop the onion, mince the garlic, and chop the parsley.
2. Heat the olive oil in a large skillet over medium heat. Add the potatoes and spread them into an even layer.
3. Cook the potatoes for 10 to 12 minutes, stirring occasionally, until they begin to turn golden and are nearly tender.
4. Add the sliced smoked Polish sausage to the skillet and cook for 4 to 5 minutes until lightly browned.
5. Stir in the chopped onion and cook for 5 to 6 minutes until softened.
6. Add the butter and minced garlic, then cook for 30 seconds until fragrant.
7. Sprinkle in the paprika, black pepper, and salt. Stir well so everything is evenly coated.
8. Continue cooking for 3 to 5 more minutes until the potatoes are fully tender and crisp at the edges.
9. Remove from the heat, sprinkle with fresh parsley, and serve hot.
Notes
Cutdown pieces of potato should be similar in size so they cook evenly and brown at the same time.
Do not stir the potatoes too often at the beginning or they will not develop crisp golden edges.
For extra flavor, add a pinch of crushed red pepper or serve with fried eggs on top.
