Description

Garlic Parmesan Roasted Potatoes are crispy on the outside, tender in the middle, and packed with rich garlic flavor and savory parmesan in every bite. Ingredients

1 1/2 pounds baby potatoes

3 tablespoons olive oil

4 cloves garlic, minced

1/2 cup grated parmesan cheese

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes

2 tablespoons fresh parsley, chopped


Instructions

1. Preheat the oven to 425°F and line a baking sheet with parchment paper or lightly grease it.

2. Wash and dry the baby potatoes well, then cut them in half.

3. Add the potatoes to a large mixing bowl with olive oil, minced garlic, salt, black pepper, Italian seasoning, and red pepper flakes. Toss until evenly coated.

4. Arrange the potatoes cut-side down on the prepared baking sheet in a single layer.

5. Roast for 30 to 35 minutes, or until the potatoes are golden brown and fork-tender.

6. Remove the pan from the oven and immediately sprinkle the hot potatoes with grated parmesan cheese.

7. Toss gently or leave as is, then finish with chopped fresh parsley.

8. Serve warm.

Notes

Use potatoes that are close in size so they roast evenly.

Dry the potatoes very well before seasoning to help them crisp up in the oven.

For the best texture, reheat leftovers in the oven or air fryer instead of the microwave.
