Ingredients
1 pound large shrimp, peeled and deveined
3 tablespoons unsalted butter, melted
1 tablespoon olive oil
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped
1 tablespoon lemon juice
Lemon wedges, for serving
Instructions
1. Preheat the oven to 400°F and lightly grease or line a baking sheet.
2. Pat the shrimp dry with paper towels and place them in a large bowl.
3. In a small bowl, mix the melted butter, olive oil, minced garlic, Parmesan cheese, Italian seasoning, paprika, salt, and black pepper.
4. Pour the garlic Parmesan mixture over the shrimp and toss until every piece is evenly coated.
5. Arrange the shrimp in a single layer on the prepared baking sheet.
6. Roast for 8 to 10 minutes, or until the shrimp are pink, opaque, and just cooked through.
7. Remove from the oven and sprinkle with fresh parsley and lemon juice.
8. Serve immediately with lemon wedges if desired.
Notes
Use large or jumbo shrimp for the best juicy texture and even roasting.
Do not overcook the shrimp, or they can turn rubbery very quickly.
Freshly grated Parmesan melts and browns better than the shelf-stable kind.
