Description

These Gluten Free Christmas Snickerdoodles are soft, chewy, and coated in a sparkling cinnamon-sugar layer with festive red and green cherry pieces on top. Ingredients

2 1/4 cups gluten free all-purpose flour with xanthan gum

2 teaspoons cream of tartar

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter, softened

1 1/4 cups granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 tablespoon ground cinnamon

1/4 cup granulated sugar, for rolling

1/3 cup red and green candied cherries, chopped


Instructions

1. Preheat the oven to 350°F and line 2 baking sheets with parchment paper.

2. In a medium bowl, whisk together the gluten free flour, cream of tartar, baking soda, and salt.

3. In a large mixing bowl, beat the softened butter with 1 1/4 cups granulated sugar until light and fluffy.

4. Add the eggs one at a time, then mix in the vanilla extract until smooth.

5. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.

6. If the dough feels sticky, chill it for 20 to 30 minutes.

7. In a small bowl, stir together the cinnamon and 1/4 cup granulated sugar.

8. Scoop the dough into balls, roll each ball in the cinnamon-sugar mixture, and place them on the prepared baking sheets.

9. Gently press chopped red and green candied cherries onto the tops of the dough balls.

10. Bake for 10 to 12 minutes, until the edges are set and the tops are slightly crackled.

11. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use a gluten free flour blend that already contains xanthan gum for the best cookie texture.

Do not overbake the cookies, because they continue setting as they cool and stay softer this way.

Chilling the dough helps prevent too much spreading and makes the cookies easier to shape.
