Ingredients

1 cup cottage cheese

1/2 cup almond flour

1/3 cup certified gluten-free oat flour

3 tablespoons maple syrup

1/3 cup mini chocolate chips

1 to 2 teaspoons coconut flour, optional for thickening


Instructions

1. Add the cottage cheese, maple syrup, vanilla extract, and sea salt to a blender or food processor.

2. Blend until completely smooth and creamy, scraping down the sides as needed.

3. Transfer the blended mixture to a mixing bowl.

4. Stir in the almond flour and gluten-free oat flour until a soft dough forms.

5. Let the dough rest for 5 minutes so the flours can absorb moisture.

6. If the dough feels too sticky, mix in coconut flour 1 teaspoon at a time.

7. Fold in the mini chocolate chips.

8. Cover and refrigerate the dough for 20 to 30 minutes.

9. Scoop and roll the chilled dough into bite-sized balls.

10. Place the bites on a parchment-lined plate and chill for 15 more minutes before serving.

Notes

Blend the cottage cheese until fully smooth so the bites taste like cookie dough instead of having a curdy texture.

Chill the dough before rolling because it firms up and becomes much easier to shape.

Add coconut flour slowly because it absorbs moisture quickly and too much can make the bites dry.
