Description

Ingredients

2 pounds boneless skinless chicken breasts

1/2 cup honey

1/3 cup gluten-free tamari

1/4 cup ketchup

4 cloves garlic, minced

2 tablespoons rice vinegar

1 teaspoon sesame oil

1 teaspoon ground ginger

2 tablespoons cornstarch

2 tablespoons water

2 tablespoons green onions, sliced

1 teaspoon sesame seeds


Instructions

1. In a medium bowl, whisk together the honey, gluten-free tamari, ketchup, minced garlic, rice vinegar, sesame oil, and ground ginger until well combined.

2. Place the chicken breasts in the slow cooker in a single layer and pour the sauce over the chicken.

3. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the chicken is fully cooked and tender.

4. Remove the chicken from the slow cooker and shred it with two forks on a plate or cutting board.

5. In a small bowl, stir together the cornstarch and water until smooth. Pour the slurry into the sauce in the slow cooker and stir well.

6. Cover and cook on high for 10 to 15 minutes more, until the sauce thickens.

7. Return the shredded chicken to the slow cooker and stir until fully coated in the thickened honey garlic sauce.

8. Top with sliced green onions and sesame seeds, then serve warm.

Notes

Use chicken thighs instead of breasts for even juicier meat.
