Ingredients
1 lb beef sirloin
8 oz cremini mushrooms
1 medium yellow onion
3 cloves garlic
2 tsp Dijon mustard
3/4 cup sour cream
1/2 cup beef broth
2 tbsp olive oil
1 tbsp butter
2 tbsp fresh parsley chopped
salt and pepper to taste
Instructions
1. Slice 1 lb beef sirloin into thin strips. Season with salt and pepper. Heat 1 tbsp olive oil in a skillet over medium-high. Sear beef in batches until browned, 1-2 minutes per batch. Remove and set aside.
2. Add 1 tbsp olive oil and 1 tbsp butter to the same skillet. Sauté 1 chopped onion for 3 minutes. Add 3 minced garlic cloves and cook 30 seconds. Add 8 oz sliced mushrooms and sauté 5-6 minutes until golden.
3. Deglaze with 1/2 cup beef broth, scraping browned bits. Stir in 2 tsp Dijon mustard and simmer 2 minutes.
4. Lower heat to medium-low and stir in 3/4 cup sour cream. Return beef and juices to the pan. Cook 2-3 minutes until warmed through. Do not boil.
5. Taste, season with salt and pepper. Garnish with 2 tbsp chopped parsley. Serve over noodles, rice, or mashed potatoes.
