Ingredients

2 boneless skinless chicken breasts

1 tablespoon olive oil

2 cloves garlic minced

2 tablespoons lemon juice

1 teaspoon dried oregano

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

3 cups cooked rice couscous or quinoa

1 cucumber diced

1 cup cherry tomatoes halved

1/4 red onion thinly sliced

1/2 cup kalamata olives

1/2 cup feta cheese crumbled

2 tablespoons tahini

1/3 cup Greek yogurt

1 tablespoon fresh dill or parsley chopped

2 to 4 tablespoons water


Instructions

1. In a medium bowl, combine the chicken, olive oil, minced garlic, lemon juice, oregano, paprika, salt, and black pepper. Toss well and let the chicken marinate for 15 minutes.

2. Cook the rice, couscous, or quinoa if it is not already prepared, then fluff it and set it aside.

3. In a small bowl or food processor, mix the feta cheese, tahini, Greek yogurt, fresh dill or parsley, and 2 tablespoons water until creamy. Add more water a little at a time until the sauce is smooth and drizzleable.

4. Heat a skillet over medium-high heat and cook the chicken for 5 to 7 minutes per side, or until fully cooked and golden on the outside.

5. Transfer the chicken to a cutting board and let it rest for 5 minutes, then slice it into strips or bite-size pieces.

6. Divide the cooked grain among 4 bowls.

7. Top each bowl with cucumber, cherry tomatoes, red onion, kalamata olives, and sliced chicken.

8. Spoon or drizzle the creamy tahini feta sauce over the bowls.

9. Finish with extra feta and fresh herbs, then serve immediately.
