Description

This Greek Tzatziki Chicken Salad is a fresh, creamy, high-protein easy recipe made with tender chicken, Greek yogurt, cucumber, lemon, garlic, and dill. Ingredients

3 cups cooked chicken, shredded or diced

1 cup plain Greek yogurt

1 cup cucumber, grated or finely diced and squeezed dry

1/4 cup red onion, finely diced

2 tablespoons fresh dill, chopped

2 tablespoons lemon juice

1 tablespoon olive oil

1 garlic clove, finely grated

1/3 cup feta cheese, crumbled optional

1/2 teaspoon kosher salt

1/4 teaspoon black pepper


Instructions

1. Grate or finely dice the cucumber, then squeeze out the excess liquid with a clean towel or paper towels.

2. In a large bowl, mix the Greek yogurt, lemon juice, olive oil, grated garlic, dill, salt, and black pepper until smooth.

3. Add the cooked chicken and fold until evenly coated with the tzatziki dressing.

4. Stir in the squeezed cucumber, red onion, and feta cheese if using.

5. Cover and refrigerate for at least 20 minutes so the flavors can blend.

6. Serve chilled on toast, in pita bread, over greens, in lettuce cups, or with crackers and vegetables.

Notes

Use thick Greek yogurt for the creamiest texture and avoid regular yogurt because it can make the salad loose.

Always squeeze the cucumber before mixing it into the dressing so the chicken salad does not become watery.

For the best flavor, chill the salad for at least 20 minutes before serving and stir again right before plating.
