500g beef tenderloin
1 baguette

2 shallots, finely chopped
2 tablespoons white wine vinegar
1 tablespoon fresh tarragon, chopped
3 egg yolks
1/2 cup unsalted butter, melted
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Pat beef tenderloin dry, season with salt and pepper, and let rest for 20 minutes.
2. Heat olive oil in a pan, sear the beef on all sides, then grill or bake at 400°F until medium-rare. Let rest, then slice.
