Ingredients
2 cups all-purpose flour
1 teaspoon baking soda

3/4 cup brown sugar
1/4 cup granulated sugar
2 large eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup unsweetened applesauce
1 cup grated apple
1 cup grated carrot
1/2 cup raisins
1/2 cup chopped walnuts
Instructions
1. Preheat the oven to 350°F and grease a 9×5-inch loaf pan.
2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
3. In another bowl, whisk together the brown sugar, granulated sugar, eggs, vegetable oil, vanilla extract, and applesauce until smooth.
4. Stir the grated apple and grated carrot into the wet mixture.
5. Fold in the raisins and chopped walnuts.
6. Add the dry ingredients to the wet ingredients and mix gently just until combined. Do not overmix.
7. Pour the batter into the prepared loaf pan and smooth the top.
8. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
9. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
