Ingredients
4 medium Yukon Gold or russet potatoes
3 tablespoons unsalted butter, melted
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh rosemary, finely chopped
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 cup grated Parmesan cheese
Instructions
1. Preheat the oven to 425°F and lightly grease a baking dish or line a baking sheet with parchment paper.
2. Wash and dry the potatoes well. Place each potato between two chopsticks or wooden spoon handles and slice thinly across the top without cutting all the way through.
3. In a small bowl, stir together the melted butter, olive oil, garlic, rosemary, salt, and black pepper.
4. Place the potatoes in the prepared dish and brush them generously with the butter mixture, making sure some gets between the slices.
5. Bake for 30 minutes, then remove from the oven and brush again with more of the butter mixture.
6. Return the potatoes to the oven and bake for 25 to 35 minutes more, until the centers are tender and the edges are crisp and golden.
