Description

This Hawaiian Pineapple Coconut Fluff is a creamy no-bake dessert loaded with crushed pineapple, sweet coconut, fluffy whipped topping, and soft mini marshmallows. Ingredients

20 ounces crushed pineapple with juice

3.4 ounces instant vanilla pudding mix

8 ounces whipped topping thawed

1 cup sweetened shredded coconut

2 cups mini marshmallows

1/2 cup sour cream or Greek yogurt

1 cup pineapple tidbits drained

1/3 cup toasted coconut for topping

1/4 cup chopped macadamia nuts or pecans optional


Instructions

1. Add the crushed pineapple with its juice to a large mixing bowl.

2. Sprinkle the instant vanilla pudding mix over the pineapple and stir until smooth and slightly thickened.

3. Stir in the sour cream or Greek yogurt until fully combined.

4. Gently fold in the thawed whipped topping until the mixture looks light and creamy.

5. Fold in the shredded coconut, mini marshmallows, and drained pineapple tidbits.

6. Cover the bowl and refrigerate for at least 2 hours, or until chilled and set.

7. Spoon into a serving bowl or dessert cups and top with toasted coconut and chopped nuts if using.

8. Serve cold.

Notes

Do not drain the crushed pineapple because the juice helps thicken the pudding mix.

Chill the fluff for at least 2 hours so the marshmallows soften and the texture sets properly.

Add toasted coconut right before serving so it stays crisp and golden.
