Ingredients

1 pound boneless skinless chicken breast, sliced into thin strips

2 tablespoons olive oil

2 tablespoons fresh lemon juice

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

3/4 teaspoon salt

1/2 teaspoon black pepper

8 small flour tortillas or corn tortillas

1 cup Greek yogurt

1 tablespoon fresh lemon juice for sauce

1 clove garlic, minced for sauce

1 tablespoon fresh dill, chopped

1 teaspoon olive oil for sauce

1/4 teaspoon salt for sauce

1/4 teaspoon black pepper for sauce

1 cup cucumber, diced

1 cup tomatoes, diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/3 cup feta cheese, crumbled

1 lemon, cut into wedges


Instructions

1. Add sliced chicken to a bowl with olive oil, lemon juice, garlic, oregano, cumin, smoked paprika, salt, and black pepper. Toss well and marinate for 15 to 30 minutes.

2. In a small bowl, stir together Greek yogurt, lemon juice, garlic, dill, olive oil, salt, and black pepper until creamy. Add a splash of water if you want a thinner sauce.

3. Dice the cucumber and tomatoes, finely chop the red onion, and chop the parsley. Set the toppings aside until ready to assemble.

4. Heat a skillet over medium-high heat. Add the marinated chicken and cook for 4 to 6 minutes, stirring occasionally, until golden and cooked through.

5. Warm the tortillas in a dry skillet for 20 to 30 seconds per side, then keep them wrapped in a clean towel.

6. Fill each tortilla with cooked chicken, cucumber, tomatoes, red onion, parsley, yogurt sauce, and feta cheese.

7. Finish with a squeeze of lemon and serve immediately.

Notes

For the juiciest chicken, do not overcrowd the skillet. Cook in batches if needed so the chicken browns instead of steaming.

Warm the tortillas right before serving so they stay soft and flexible.

Keep the yogurt sauce and toppings separate if meal prepping, then assemble the tacos just before eating.
