Ingredients

6 large eggs

1 cup liquid egg whites

1 cup cottage cheese

1 cup shredded cheddar cheese

1 cup chopped spinach

1/2 cup diced red bell pepper

1/4 cup sliced green onion

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1 tablespoon olive oil or cooking spray


Instructions

1. Preheat the oven to 350°F and lightly grease a 12-cup muffin tin with olive oil or cooking spray.

2. If needed, sauté the spinach and red bell pepper for 2 to 3 minutes to remove extra moisture, then let them cool slightly.

3. In a blender or large bowl, combine the eggs, egg whites, cottage cheese, salt, black pepper, and garlic powder until smooth.

4. Stir in the shredded cheddar cheese, chopped spinach, diced red bell pepper, and green onion.

5. Divide the mixture evenly among the muffin cups, filling each about three-quarters full.

6. Bake for 18 to 22 minutes, or until the centers are set and the tops are lightly golden.

7. Let the egg bites cool in the pan for 5 minutes, then remove and serve warm or store for later.

Notes

Blend the egg mixture well for the fluffiest texture.

Cook watery vegetables first so the egg bites do not turn soggy.
