Ingredients

1 lb breakfast sausage

8 oz cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

10 oz diced tomatoes with green chiles, drained

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1/4 tsp red pepper flakes

1 tbsp fresh parsley, chopped


Instructions

1. Brown the breakfast sausage in a skillet over medium heat, breaking it into crumbles as it cooks. Drain excess grease.

2. Lower the heat and stir in the softened cream cheese and sour cream until smooth and creamy.

3. Add the drained diced tomatoes with green chiles, garlic powder, onion powder, smoked paprika, and red pepper flakes. Stir well.

4. Fold in 3/4 cup cheddar cheese and 3/4 cup Monterey Jack cheese, mixing until melted and combined.

5. Transfer the mixture to a small baking dish or keep it in an oven-safe skillet. Top with the remaining cheddar and Monterey Jack.

6. Bake at 375°F for 15 to 20 minutes, until hot, bubbly, and lightly golden on top.

7. Rest for 5 minutes, sprinkle with chopped parsley, and serve warm.

Notes

Drain the tomatoes well so the dip stays thick and scoopable.

For a milder version, reduce the red pepper flakes or use mild sausage.

Reheat leftovers gently with a spoonful of sour cream or a splash of milk if needed.
