Ingredients

3 cups old-fashioned rolled oats

1 cup raw hazelnuts, chopped

1/3 cup unsweetened cocoa powder

1/4 teaspoon salt

1/3 cup coconut oil

1/2 cup maple syrup

1 teaspoon vanilla extract

1/2 cup dark chocolate chunks


Instructions

1. In a large bowl, mix together the rolled oats, chopped hazelnuts, cocoa powder, and salt.

2. In a small saucepan over low heat, melt the coconut oil. Remove from heat and stir in maple syrup and vanilla.

3. Pour the wet ingredients into the dry mixture and stir until everything is well coated.

4. Spread the mixture onto a parchment-lined baking sheet in an even layer.

5. Bake at 325°F (160°C) for 25 to 30 minutes, stirring once halfway through.

6. Let the granola cool completely on the baking tray.

7. Once cool, stir in the dark chocolate chunks.

8. Store in an airtight container at room temperature for up to 2 weeks.

Notes

Always cool the granola completely before adding chocolate to avoid melting.

Swap hazelnuts with any nuts or seeds based on preference.

Use parchment paper to ensure easy removal and cleanup.
