Ingredients
2 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1/4 cup vegetable oil
1 3/4 cups granulated sugar
4 large eggs, room temperature
1 tablespoon vanilla extract
3/4 cup sour cream, room temperature
3/4 cup whole milk, room temperature
3/4 cup Easter jimmies sprinkles
1 cup unsalted butter, softened, for frosting
4 cups powdered sugar
2 teaspoons vanilla extract, for frosting
1/4 teaspoon salt, for frosting
3 tablespoons heavy cream
1/4 cup Easter sprinkles, for topping
Instructions
1. Preheat the oven to 350°F. Grease a 9×13-inch baking pan and line it with parchment paper if desired.
2. Whisk the flour, baking powder, and salt together in a medium bowl.
3. In a large bowl, beat the butter, vegetable oil, and sugar until pale and fluffy.
4. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
5. Mix in the sour cream until smooth.
6. Add the dry ingredients in three additions, alternating with the milk, and mix on low speed until just combined.
7. Gently fold in the Easter sprinkles with a spatula.
8. Spread the batter evenly into the prepared pan.
9. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
10. Let the cake cool completely before frosting.
11. Beat the frosting butter until creamy, then gradually add powdered sugar.
12. Mix in vanilla, salt, and heavy cream, then beat until fluffy and spreadable.
13. Spread the frosting over the cooled cake and decorate with Easter sprinkles.
14. Chill for 20 to 30 minutes for cleaner slices, then cut and serve.
Notes
Use jimmies-style sprinkles in the batter because they bleed less than nonpareils.
Make sure the cake is completely cool before frosting so the buttercream does not melt.
For the softest slices, serve the cake near room temperature instead of straight from the refrigerator.
