Ingredients
2 tablespoons olive oil
1 medium yellow onion, diced

3 cans white beans, drained and rinsed
4 cups vegetable broth
1 can diced tomatoes
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 cups spinach or kale
1/4 cup grated Parmesan cheese
6 slices crusty bread
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, then cook for 6 to 8 minutes until softened.
2. Stir in the garlic and tomato paste, then cook for 1 minute until fragrant.
3. Add the white beans, vegetable broth, diced tomatoes, Italian seasoning, salt, and black pepper. Stir well and bring to a gentle simmer.
4. Simmer for 20 minutes, stirring occasionally, until the vegetables are tender and the broth tastes rich.
5. Mash about 1 cup of the beans in the pot with the back of a spoon to thicken the soup slightly, if desired.
6. Stir in the spinach or kale and cook for 2 to 3 minutes until wilted.
7. Taste and adjust seasoning if needed.
8. Ladle into bowls and top with Parmesan cheese. Serve hot with crusty bread.
Notes
For a thicker soup, mash more of the beans before serving.
Cannellini beans give the creamiest texture, but Great Northern beans also work well.
Add a squeeze of lemon at the end for a brighter finish.
