Ingredients

1 cup unsalted butter, softened

3/4 cup granulated sugar

3/4 cup brown sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups semi-sweet chocolate chips, divided

9 large marshmallows, halved

1/4 cup heavy cream


Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.

3. Add the eggs one at a time, then mix in the vanilla extract.

4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.

5. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.

6. Fold in 1 cup of the chocolate chips.

7. Scoop the dough onto the prepared baking sheets, spacing the cookies apart.

8. Bake for 9 to 11 minutes, until the edges are set and the centers still look slightly soft.

9. Press a marshmallow half into the center of each cookie and return to the oven for 1 to 2 minutes.

10. Heat the remaining 1/2 cup chocolate chips with the heavy cream until smooth, then drizzle over the warm cookies.

11. Let the cookies cool for 10 minutes before serving.

Notes

Use room temperature butter so the dough creams smoothly and bakes into a softer cookie.

Do not overbake the cookies because the centers continue to set as they cool.

Add the marshmallows near the end so they stay soft and gooey without fully collapsing.
