Description

Indian Roasted Cabbage is a quick dinner side, easy recipe, and flavorful vegetable dish packed with warm spices, crispy edges, and tender bites. Ingredients

1 medium green cabbage, chopped

1 medium yellow onion, sliced

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon ground turmeric

1 teaspoon garam masala

1/2 teaspoon red chili powder

3/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon lemon juice

2 tablespoons fresh cilantro, chopped


Instructions

1. Preheat the oven to 425°F and line a large baking sheet with parchment paper if desired.

2. Add the chopped cabbage and sliced onion to a large mixing bowl.

3. Drizzle in the olive oil, then add the garlic, cumin, turmeric, garam masala, red chili powder, salt, and black pepper.

4. Toss everything very well until the cabbage and onion are evenly coated with oil and spices.

5. Spread the mixture onto the baking sheet in an even layer so the vegetables roast instead of steam.

6. Roast for 25 to 30 minutes, stirring once halfway through, until the cabbage is tender and the edges are browned and slightly crisp.

7. Remove from the oven and immediately drizzle with lemon juice.

8. Sprinkle with fresh cilantro, toss lightly, and serve warm.

Notes

Spread the cabbage out well on the pan so it roasts and caramelizes instead of steaming.

For more heat, add an extra pinch of chili powder or cayenne before roasting.

Reheat leftovers in the oven or a skillet for the best texture.
