Ingredients

2 cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, softened

2 large eggs

3/4 cup milk

1 teaspoon vanilla extract

3 cups fresh peaches, peeled and sliced or chopped

2 tablespoons powdered sugar, for dusting

1/2 cup powdered sugar, for glaze

1 tablespoon milk, for glaze


Instructions

1. Preheat the oven to 350°F and grease a 9-inch round cake pan. Line the bottom with parchment paper if desired for easier removal.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, beat the softened butter and granulated sugar until pale and fluffy.

4. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.

5. Add the dry ingredients to the butter mixture in batches, alternating with the milk, and mix just until combined.

6. Fold in about 2 1/2 cups of the peaches, reserving the rest for the top of the cake.

7. Spread the batter into the prepared pan and gently arrange the remaining peaches over the top.

8. Bake for 45 to 50 minutes, or until the top is golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.

10. Dust with powdered sugar or whisk together 1/2 cup powdered sugar and 1 tablespoon milk to make a light glaze, then drizzle over the cooled cake before serving.

Notes

Use ripe but slightly firm peaches so the cake stays tender without becoming too wet.

Do not overmix the batter once the flour is added or the cake can turn dense.
