They are a great choice for spring gatherings, quick dessert bars, easy baking days, party treats, and food ideas when you want a simple homemade dessert that feels fresh and cheerful.

Ingredients

1 cup unsalted butter, melted

1 1/2 cups granulated sugar

2 large eggs

2 tablespoons fresh lemon juice

2 tablespoons lemon zest

1 1/2 cups all-purpose flour

1/2 teaspoon salt

1 cup powdered sugar

2 tablespoons fresh lemon juice, for glaze

Instructions

1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.

2. In a large bowl, whisk together the melted butter and granulated sugar until smooth.

3. Add the eggs, lemon juice, and lemon zest, then whisk until fully combined.

4. Stir in the flour and salt just until the batter comes together and no dry spots remain.

5. Spread the batter evenly into the prepared pan.

6. Bake for 24 to 28 minutes, or until the edges are lightly golden and the center is set.

7. Let the blondies cool completely in the pan.

8. In a small bowl, whisk together the powdered sugar and lemon juice for the glaze.

9. Spread the glaze over the cooled blondies and let it set before slicing.

10. Cut into 9 or 12 squares and serve.

Notes

Use fresh lemon juice and zest for the best bright citrus flavor.

Do not overmix the batter once the flour is added, or the bars can turn out dense.

Let the blondies cool fully before glazing so the topping stays smooth and sets properly.
