1 cup white chocolate melting wafers

1/2 cup crushed vanilla wafers

1 tablespoon melted butter

1/4 cup yellow candy melts or lemon curd for drizzle


Instructions

1. Beat the softened cream cheese in a mixing bowl until smooth and creamy.

2. Add powdered sugar, lemon zest, lemon juice, vanilla extract, and salt, then mix until fluffy and fully combined.

3. Fold in the graham cracker crumbs until the mixture thickens enough to scoop.

4. Scoop the filling into 1-tablespoon portions and roll into small balls.

5. Place the cheesecake balls on a parchment-lined baking sheet and freeze for 25 to 30 minutes.

6. Mix the crushed vanilla wafers with melted butter and set aside for topping.
