2 and 3/4 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 and 3/4 cups granulated sugar

1 tablespoon lemon zest

1/4 cup fresh lemon juice

1 cup buttermilk

1/2 cup vegetable oil

1/2 cup unsalted butter, softened

4 large eggs

2 teaspoons vanilla extract

16 ounces cream cheese, softened

1 cup unsalted butter (for frosting)

5 cups powdered sugar

1 tablespoon lemon juice (for frosting)

1 cup white chocolate, melted (for drip)


Instructions

1. Preheat your oven to 350°F (175°C) and line three 8-inch cake pans with parchment paper.

2. In a bowl, whisk together flour, baking powder, baking soda, and salt.

3. Beat the butter, oil, and sugar until fluffy.

4. Add eggs one at a time, then mix in vanilla, lemon zest, and lemon juice.

5. Add the dry ingredients alternately with buttermilk, beginning and ending with flour. Mix until just combined.

6. Divide the batter into pans and bake for 22–25 minutes. Cool completely.

7. For frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and lemon juice.

8. Stack and frost the cooled cakes.

9. Drizzle melted white chocolate over the top and garnish with lemon slices or zest.

Notes

For extra lemon flavor, add a few drops of lemon extract to the batter.

Make sure ingredients are at room temperature before mixing for smoother results.
