Ingredients
32 ounces frozen tater tots
8 large eggs
8 slices bacon
1 1/2 cups shredded cheddar cheese
1/2 cup sour cream
1/3 cup sliced green onions
1/2 cup diced red bell pepper
2 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1 tablespoon hot sauce, optional
Instructions
1. Preheat the oven to 425°F, or follow the temperature listed on the tater tot package.
2. Spread the tater tots in a single layer on a baking sheet and bake until golden and crispy, about 25 to 30 minutes.
3. Cook the bacon in a skillet over medium heat until crisp, then transfer to a paper towel-lined plate and crumble.
4. Slice the green onions and dice the red bell pepper while the tots finish baking.
5. Whisk the eggs with salt, black pepper, garlic powder, and smoked paprika.
6. Melt the butter in a nonstick skillet over medium-low heat, then add the eggs and scramble gently until just set.
7. Divide the crispy tater tots among 4 bowls.
8. Top each bowl with scrambled eggs, shredded cheddar cheese, crumbled bacon, sour cream, red bell pepper, and green onions.
9. Finish with hot sauce if desired and serve immediately.
Notes
Bake the tater tots until deeply golden so they stay crisp under the toppings.
Add sour cream right before serving so the tots do not soften too quickly.
For a spicy version, use pepper jack cheese, jalapeños, or extra hot sauce.
