1 1/4 cups all-purpose flour
1/4 cup powdered sugar
1/4 teaspoon salt
1/2 cup cold unsalted butter
1 egg yolk
2 tablespoons cold water
1/2 cup pure maple syrup
1/3 cup brown sugar
2 large eggs
1/2 cup heavy cream
1/3 cup unsalted butter, browned
1 teaspoon vanilla extract
1/4 teaspoon salt
Sea salt flakes for topping
Instructions
1. In a mixing bowl, combine the flour, powdered sugar, and salt for the crust. Cut in the cold butter until the mixture looks crumbly. Add the egg yolk and cold water, then mix just until a dough forms.
2. Shape the dough into a disk, wrap it, and chill for 30 minutes.
3. Preheat the oven to 350°F. Roll out the dough and cut circles to fit 6 tartlet pans. Press the dough into the pans and trim the edges. Chill again for 10 minutes.
4. In a small saucepan, melt the butter for the filling over medium heat until golden brown and nutty. Remove from the heat and let it cool slightly.

Notes
