Ingredients

1 small green cabbage, cut into 4 to 6 wedges

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 small onion, finely diced

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes

1/2 cup chicken broth

3/4 cup heavy cream

1/2 cup grated parmesan cheese, plus more for serving

1 tablespoon chopped fresh parsley


Instructions

1. Preheat the oven to 425°F and lightly grease a baking dish or sheet pan.

2. Cut the cabbage into thick wedges, keeping part of the core attached so the wedges stay together.

3. Brush both sides of the cabbage with olive oil, then season with salt and black pepper.

4. Roast for 20 minutes, carefully flip, and roast for 10 more minutes until the edges begin to brown.

5. While the cabbage roasts, heat a skillet over medium heat and cook the diced onion until soft, about 4 to 5 minutes.

6. Add the garlic, Italian seasoning, and red pepper flakes, and cook for 30 seconds until fragrant.

7. Pour in the chicken broth and heavy cream, then simmer for 2 to 3 minutes.

8. Stir in the parmesan cheese until melted and the sauce is smooth.

9. Pour the sauce around and lightly over the roasted cabbage wedges.

10. Return the cabbage to the oven and bake for 10 to 15 minutes more, until very tender and bubbling.

11. Spoon sauce over the top, garnish with extra parmesan and parsley, and serve hot.

Notes

Keep a little of the cabbage core attached so the wedges hold their shape while roasting.

For a vegetarian version, replace the chicken broth with vegetable broth.

Add extra parmesan on top before the final bake for a more golden and savory finish.
