Ingredients

2 pounds ground beef

1 cup plain breadcrumbs

2 large eggs

1/2 cup milk

1 small yellow onion, finely diced

3 cloves garlic, minced

1/3 cup ketchup

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 1/2 teaspoons salt

1 teaspoon black pepper

1 teaspoon Italian seasoning

4 cups prepared mashed potatoes

3 tablespoons butter

1/2 cup sour cream

2 cups shredded cheddar cheese

6 slices cooked bacon, chopped

2 tablespoons fresh parsley, chopped

Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. In a large bowl, combine the ground beef, breadcrumbs, eggs, milk, onion, garlic, ketchup, Worcestershire sauce, Dijon mustard, salt, black pepper, and Italian seasoning. Mix just until combined.

3. Press the meat mixture evenly into the prepared baking dish.

4. Bake the meatloaf layer for 25 to 30 minutes, or until mostly cooked through and firm on top. Carefully spoon off excess grease if needed.

5. While the meatloaf bakes, stir the warm mashed potatoes with butter and sour cream until creamy and spreadable.

6. Remove the meatloaf from the oven and spread the mashed potatoes evenly over the top.

7. Sprinkle the shredded cheddar cheese over the mashed potatoes, then scatter the chopped bacon on top.

8. Return the dish to the oven and bake for 15 to 20 minutes, or until the cheese is melted and bubbling.

9. Let the dish rest for 10 minutes, then garnish with parsley and slice into servings.

Notes

Use 80/20 or 85/15 ground beef for a juicy meatloaf layer that stays tender after baking.

Do not overmix the beef mixture, because overmixing can make the meatloaf dense.

Let the dish rest before slicing so the mashed potato and meatloaf layers hold together neatly.
