Ingredients
1 lb ground beef
10 oz Rotel tomatoes, drained slightly
8 oz cream cheese, softened
1 cup sour cream
2 cups shredded cheddar cheese
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp chopped parsley or cilantro
Instructions
1. In a large skillet over medium heat, cook the ground beef until browned, breaking it into crumbles as it cooks. Drain excess grease.
2. Stir in the Rotel tomatoes, garlic powder, onion powder, chili powder, salt, and black pepper. Cook for 2 to 3 minutes.
3. Reduce the heat to low and add the cream cheese. Stir until fully melted and smooth.
4. Mix in the sour cream and stir gently until the dip is creamy and combined.
5. Add the shredded cheddar cheese and stir until melted and glossy.
6. Garnish with chopped parsley or cilantro and serve warm with tortilla chips, crackers, or toasted bread.
Notes
Drain the beef well so the dip stays creamy instead of greasy.
Keep the heat low after adding the sour cream to prevent the mixture from separating.
For a thinner dip, stir in 2 to 4 tablespoons of milk while reheating.
