Ingredients

8 cups chicken broth

1 cup white rice

3 cups cooked shredded chicken

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup fresh cilantro, chopped

2 tablespoons fresh lime juice


Instructions

1. Heat the olive oil in a large pot over medium heat.

2. Add the diced onion and red bell pepper, then cook for 4 to 5 minutes until softened.

3. Stir in the garlic and cook for 30 seconds until fragrant.

4. Add the diced tomatoes, chili powder, cumin, oregano, salt, and black pepper, then stir well.

5. Pour in the chicken broth and add the white rice.

6. Bring the soup to a gentle boil, then reduce the heat and simmer for 18 to 20 minutes until the rice is tender.

7. Stir in the shredded chicken and cook for 5 more minutes until heated through.

Notes
