Ingredients

1 1/2 pounds boneless chicken breast or thighs, cut into bite-size pieces

2 tablespoons olive oil

2 tablespoons lemon juice

3 cloves garlic, minced

1 1/2 teaspoons dried oregano

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon black pepper

1 cup Greek yogurt

1/2 cup grated cucumber, squeezed dry

1 tablespoon fresh dill or parsley, chopped

1 tablespoon lemon juice for the sauce

1 small garlic clove, grated for the sauce

1/4 teaspoon salt for the sauce

4 large pita breads, flatbreads, naan, or tortillas

2 cups chopped romaine lettuce

1 cup cucumber slices

1/2 cup thinly sliced red onion

1/2 cup crumbled feta cheese, optional

4 lemon wedges for serving


Instructions

1. Add the chicken to a bowl with olive oil, lemon juice, minced garlic, oregano, smoked paprika, cumin, salt, and black pepper. Toss until well coated and let it rest for 10 to 15 minutes.

2. Make the tzatziki by stirring Greek yogurt, grated cucumber, dill or parsley, lemon juice, grated garlic, and salt together in a bowl. Chill until ready to use.

3. Heat a large skillet over medium-high heat. Add the chicken in a single layer and cook for 6 to 8 minutes, turning occasionally, until golden and cooked through.

4. Warm the pita, flatbread, naan, or tortillas in a dry skillet for a few seconds on each side until soft and flexible.

5. Fill each bread with romaine lettuce, cucumber slices, red onion, cooked chicken, tzatziki sauce, and feta if using.

6. Fold the bottom up, tuck in the sides, and roll tightly. Wrap in foil or parchment if desired.

7. Serve right away with lemon wedges and extra tzatziki on the side.

Notes

Squeeze the grated cucumber well before adding it to the sauce so the tzatziki stays thick and creamy.

Do not overcrowd the skillet when cooking the chicken; a single layer helps the pieces brown instead of steam.

Assemble the wraps just before serving for the best texture, especially if using juicy cucumbers and plenty of sauce.
