Ingredients

1 cup pecans

1 cup Medjool dates (pitted)

1/2 cup rolled oats

1 tablespoon maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1 pinch salt

Optional: finely chopped pecans for rolling


Instructions

1. Pit and soak 1 cup of Medjool dates in warm water for 10 minutes if they’re not soft. Drain before using.

2. In a food processor, pulse 1 cup pecans and 1/2 cup rolled oats until finely ground.

3. Add the soaked dates, 1 tablespoon maple syrup, 1/2 teaspoon cinnamon, 1 teaspoon vanilla extract, and a pinch of salt. Blend until the mixture becomes sticky and forms a dough.

4. Scoop out tablespoon-sized portions and roll into balls. You should get around 12 balls.

5. Roll the balls in finely chopped pecans if desired for extra crunch.

Notes

Use soft Medjool dates for best texture. If firm, soak them for 10 minutes in warm water.

Toasting the pecans enhances the nutty flavor. A quick toast in a dry pan works well.
