Ingredients
2 cups Medjool dates, pitted
1 cup raw walnuts
1/2 cup unsweetened cocoa powder
1/4 cup almond flour
1 teaspoon vanilla extract
1/4 teaspoon sea salt
Instructions
1. If your dates aren’t soft, soak them in warm water for 10 minutes, then drain well. This helps them blend more easily and form a sticky base.
2. Add the raw walnuts to a food processor and pulse until they resemble coarse crumbs. Don’t over-blend; you want texture, not walnut butter.
3. Add the pitted dates, cocoa powder, almond flour, vanilla extract, and sea salt to the processor. Blend until the mixture forms a sticky dough that holds together when pinched.
4. Line a loaf pan or small square baking dish with parchment paper. Press the brownie mixture into the pan evenly, smoothing the top with a spatula or your hands.
5. Refrigerate for at least 1 hour to firm up. Once set, lift the brownie slab out of the pan and slice into 12 bars or squares.
Notes
For firmer brownies, freeze instead of refrigerating.
If using regular dates, always soak and drain to match Medjool softness.
These are great with 1/4 cup mini chocolate chips mixed in after blending.
