Ingredients

1 pound ground beef

1 tablespoon olive oil

1 small yellow onion, diced

3 cloves garlic, minced

1 1/2 cups dry orzo

1 can 14.5 ounces diced tomatoes

1 cup tomato sauce

2 1/2 cups beef broth

1 teaspoon Italian seasoning

1/2 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped


Instructions

1. Preheat the oven to 375°F.

2. Heat olive oil in a large oven-safe skillet over medium-high heat.

3. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.

4. Add diced onion and cook for 3 to 4 minutes, until softened.

5. Stir in garlic and cook for 30 seconds, just until fragrant.

6. Add diced tomatoes, tomato sauce, beef broth, Italian seasoning, smoked paprika, salt, and black pepper. Stir well.

7. Stir in the dry orzo and make sure it is mostly covered by the liquid.

8. Simmer for 5 minutes, stirring occasionally.

9. Sprinkle mozzarella and Parmesan evenly over the top.

10. Transfer the skillet to the oven and bake for 15 to 18 minutes, until the orzo is tender and the cheese is melted.

11. Let the bake rest for 5 minutes before serving.

12. Garnish with fresh parsley and extra Parmesan if desired.

Notes

Use an oven-safe skillet so the dish can move straight from the stovetop to the oven without transferring.

If the orzo looks too thick before baking, stir in an extra splash of beef broth.

Let the bake rest for 5 minutes after cooking so the sauce thickens and the texture becomes creamy.
