1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

2 tablespoons chopped fresh parsley

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

2 tablespoons cold butter, melted

1/2 cup milk

1/4 cup heavy cream


Instructions

1. Melt the butter in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery, then cook for 5 to 6 minutes until softened.

2. Stir in the garlic and cook for 30 seconds until fragrant.

3. Sprinkle in 1/3 cup flour and stir well to coat the vegetables. Cook for 1 minute.

4. Slowly pour in the chicken broth while stirring, then add 1 cup milk, salt, black pepper, and dried thyme.

5. Stir in the shredded chicken and bring the mixture to a gentle simmer.

6. In a separate bowl, whisk together 1 cup flour, baking powder, and 1/2 teaspoon salt. Stir in the melted butter and 1/2 cup milk until a soft dough forms.

7. Drop spoonfuls of dumpling dough over the simmering chicken mixture.

8. Cover the pot tightly and cook on low for 15 minutes without lifting the lid.

9. Check that the dumplings are cooked through, then stir in the parsley and heavy cream.

10. Serve hot and enjoy.

Notes

Use rotisserie chicken to save time and make this dinner even easier on busy nights.

Keep the lid closed while the dumplings steam so they turn out light and fluffy.
