Ingredients

2 large chicken breasts or thighs

2 carrots, sliced

2 celery stalks, diced

1 small onion, chopped

3 cloves garlic, minced

6 cups chicken broth

1 cup heavy cream

2 tablespoons flour

2 tablespoons butter

1 bay leaf

1 teaspoon dried thyme

Salt and pepper to taste

1 cup all-purpose flour

2 teaspoons baking powder

0.5 teaspoon salt

0.5 cup milk

2 tablespoons melted butter


Instructions

1. Melt butter in a large pot over medium heat. Add onion, celery, and carrots. Sauté until softened, about 5–7 minutes.

2. Stir in garlic and cook for 1 minute more.

3. Add chicken, broth, bay leaf, thyme, salt, and pepper. Bring to a boil, reduce heat, and simmer covered for 20 minutes.

4. Remove chicken, shred it with forks, then return to pot. Discard bay leaf.

5. Mix flour and heavy cream into a slurry, then slowly stir it into the soup to thicken. Simmer 5–10 minutes.

6. In a bowl, mix flour, baking powder, and salt for the dumplings. Stir in melted butter and milk until just combined.

7. Drop spoonfuls of dumpling dough into soup. Cover and simmer for 15 minutes—do not lift the lid.

8. Check dumplings for doneness. Serve hot, garnished with fresh herbs if desired.

Notes

Avoid lifting the lid while the dumplings cook—steam is key!

You can swap heavy cream with whole milk for a lighter version.

Add peas or corn for extra veggies and sweetness.
