Ingredients

4 bone-in skin-on chicken thighs

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 teaspoon paprika

1 tablespoon olive oil

2 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons Dijon mustard

1/3 cup fresh lemon juice

1 cup chicken broth

1/2 cup heavy cream

1 teaspoon fresh thyme leaves

1 lemon, thinly sliced

2 tablespoons fresh parsley, chopped


Instructions

1. Pat the chicken thighs dry, then season both sides with salt, black pepper, and paprika.

2. Heat olive oil in a large skillet over medium-high heat.

3. Place the chicken skin-side down and sear for 5 to 7 minutes, until golden and crisp.

4. Flip the chicken and cook for 3 minutes, then transfer it to a plate.

5. Reduce the heat to medium and melt the butter in the same skillet.

6. Add the garlic and cook for 30 seconds, stirring until fragrant.

7. Stir in the Dijon mustard and lemon juice until combined.

8. Pour in the chicken broth, scraping the bottom of the skillet to release the browned bits.

9. Stir in the heavy cream and thyme, then simmer for 2 to 3 minutes.

10. Return the chicken to the skillet, skin-side up, and add the lemon slices around it.

11. Cover and simmer gently for 15 to 20 minutes, or until the chicken reaches 165°F internally.

12. Garnish with chopped parsley and serve warm with the lemon Dijon sauce spooned around the chicken.

Notes

Use chicken pieces that are close in size so they cook evenly.

Keep the sauce at a gentle simmer after adding cream to prevent separating.

For a thicker sauce, simmer it uncovered for a few extra minutes before serving.
