Description

Pecan Upside Down Cake is a rich and comforting dessert with a buttery brown sugar pecan topping and a soft, moist vanilla cake underneath. It is perfect for holiday dessert tables, brunch spreads, easy dessert nights, and cozy food ideas when you want a beautiful homemade cake that feels special without being difficult. This easy recipe is one of those classic baking ideas that works for family gatherings, weekend baking, and make-ahead dessert planning.

Ingredients

1 cup pecans, chopped

1/2 cup unsalted butter, melted

1 cup brown sugar, packed

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

3 large eggs

1 cup milk

2 teaspoons vanilla extract

Instructions

1. Preheat the oven to 350°F and grease a bundt pan or tube pan very well.

2. Stir together the melted butter and brown sugar, then spread the mixture evenly into the bottom of the prepared pan.

3. Sprinkle the chopped pecans evenly over the brown sugar mixture.

4. In a medium bowl, whisk together the flour, baking powder, and salt.

5. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.

6. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.

7. Add the dry ingredients in batches, alternating with the milk, and mix just until the batter is smooth.

8. Spoon the batter gently over the pecan layer and smooth the top.

9. Bake for 40 to 50 minutes, or until a toothpick inserted into the cake comes out clean.

10. Let the cake cool in the pan for 10 to 15 minutes.

11. Carefully invert the cake onto a serving plate.

12. Cool slightly, slice, and serve.

Notes

Use a well-greased pan so the pecan topping releases cleanly after baking.

Do not overmix the batter once the flour is added or the cake can become dense.

Invert the cake while it is still warm so the sticky topping does not harden in the pan.
