Ingredients

2 tablespoons olive oil

1 medium yellow onion, diced

3 cloves garlic, minced

2 cans green chiles, 4 ounces each

3 cups cooked shredded chicken

2 cans Great Northern beans, 15 ounces each, drained and rinsed

1 cup corn

4 cups chicken broth

1 teaspoon ground cumin

1 teaspoon dried oregano

1/2 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

4 ounces cream cheese, softened

1 cup half-and-half

1 tablespoon lime juice

1/4 cup chopped fresh cilantro

1 cup shredded cheddar cheese

1/2 cup sour cream

1 jalapeño, sliced


Instructions

1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook for 4 to 5 minutes until softened.

2. Stir in the garlic and green chiles, and cook for 1 minute until fragrant.

3. Add the shredded chicken, Great Northern beans, corn, chicken broth, cumin, oregano, chili powder, salt, and black pepper. Stir well to combine.

4. Bring the chili to a gentle boil, then reduce the heat and simmer uncovered for 20 to 25 minutes.

5. Add the softened cream cheese in small pieces and stir until melted into the broth.

6. Pour in the half-and-half and stir until the chili is smooth and creamy.

7. Stir in the lime juice and chopped cilantro. Taste and adjust seasoning if needed.

8. Ladle into bowls and top with shredded cheddar cheese, sour cream, and jalapeño slices before serving.

Notes

Use rotisserie chicken for an even faster weeknight dinner.

For a thicker chili, mash some of the beans before stirring them into the pot.
