Description

Ingredients

1 1/2 cups shredded low-moisture mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup mini pepperoni slices

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/4 teaspoon crushed red pepper flakes

1 tablespoon chopped fresh parsley or basil

1/2 cup pizza sauce or marinara sauce for dipping


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper, or lightly grease a mini muffin pan.

2. Stir together mozzarella, Parmesan, Italian seasoning, garlic powder, and crushed red pepper flakes in a bowl.

3. Spoon small mounds of the cheese mixture onto the parchment, or add about 1 tablespoon into each mini muffin cup.

4. Top each cheese mound with 1 to 2 mini pepperoni slices and press them down gently.

5. Bake for 7 to 10 minutes, until the cheese is bubbling and the edges are golden brown.

6. Let the chips cool on the pan for 5 to 8 minutes so they firm up and become crisp.

7. Transfer to a plate, sprinkle with parsley or basil, and serve with warm pizza sauce or marinara.

Notes

Use low-moisture mozzarella instead of fresh mozzarella so the chips crisp instead of turning watery.

Let the chips cool before moving them because they firm up as the cheese sets.

Do not overload the chips with pepperoni or wet toppings, since extra oil and moisture can make them soft.
