Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

2 teaspoons baking powder

1/4 teaspoon salt

3/4 cup unsweetened almond milk

1 tablespoon apple cider vinegar

1 teaspoon vanilla extract

2 tablespoons melted coconut oil

2 to 3 cups vegetable oil for frying

1 1/2 cups powdered sugar

2 to 3 tablespoons unsweetened almond milk for glaze

2 tablespoons rainbow sprinkles


Instructions

1. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

2. In a separate bowl, stir together the almond milk, apple cider vinegar, vanilla extract, and melted coconut oil. Let it sit for 1 minute.

3. Pour the wet mixture into the dry ingredients and stir until a soft dough forms.

4. Lightly flour a clean surface and roll the dough to about 1/2 inch thick. Cut into donut shapes.

5. Heat the vegetable oil in a deep pot to 350°F.

6. Fry the donuts in small batches for 1 to 2 minutes per side until golden brown. Transfer to a wire rack lined with paper towels.

7. In a small bowl, whisk the powdered sugar with 2 to 3 tablespoons almond milk until smooth.

8. Dip the slightly cooled donuts into the glaze and top with rainbow sprinkles before the glaze sets.

Notes

Use a thermometer to keep the oil close to 350°F for the best texture.

Do not overmix the dough or the donuts can turn dense instead of fluffy.

Glaze the donuts while they are slightly warm so the coating settles nicely on top.
