Ingredients

2 large boneless skinless chicken breasts, sliced into 4 thin cutlets

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

1 teaspoon Italian seasoning

2 tablespoons all-purpose flour

1 tablespoon olive oil

4 tablespoons unsalted butter, divided

5 cloves garlic, minced

1/2 cup chicken broth

1 tablespoon fresh lemon juice

2 tablespoons fresh parsley, chopped

1/4 teaspoon red pepper flakes, optional


Instructions

1. Slice the chicken breasts into thin cutlets and pat them dry with paper towels.

2. Season both sides with salt, black pepper, paprika, and Italian seasoning.

3. Lightly coat the chicken with flour and shake off the excess.

4. Heat olive oil in a large skillet over medium-high heat.

5. Sear the chicken for 4 to 5 minutes per side, or until golden and cooked through.

6. Transfer the chicken to a plate and loosely cover it.

7. Reduce the heat to medium and add 2 tablespoons butter to the skillet.

8. Stir in the minced garlic and cook for about 30 seconds, just until fragrant.

9. Pour in the chicken broth and scrape up the browned bits from the pan.

10. Simmer for 2 to 3 minutes, then stir in the remaining butter until melted.

11. Add lemon juice and red pepper flakes, then taste and adjust seasoning if needed.

12. Return the chicken to the skillet and spoon the sauce over the top.

13. Simmer for 1 to 2 minutes, garnish with parsley, and serve warm.

Notes

Use thin chicken cutlets so the chicken cooks evenly and stays juicy.

Do not let the garlic brown too much; it should smell fragrant, not bitter.

Add a splash of broth when reheating leftovers to loosen the garlic butter sauce.
